I am not sure what started it, but I have been on a crazy sausage kick lately. I probably went years without mixing sausage into the normal meal routine, but we have been having it weekly for the past three or four months now. The Polish side of my family is from a place “Up North” as we Michiganders call it, near a town called Rogers City. In this adorable little lakeside town, there is a place called Rygwelski’s IGA. It is a typical small town grocery, but this place has the most amazing fresh polish keilbasa that you will ever have. I am not kidding. I literally crave this stuff and often beg family to bring some down if they are visiting, or plan a stop if I am anywhere near the area. It is that good.
When I don’t have any of that on hand, I have to settle for whatever my local store has in stock. During my last shopping trip, they had a decent sale on some Johnsonville smoked sausage, so I picked up a package and tried a new recipe. My husband is not a fan of potatoes, so I wanted to try something a little different and I know how much he loves cheese. I have the perfect cheese sauce, which I will detail out below, and I just tossed my fried potato slices and sausage pieces in and mixed it all up.
Sausage and Potato Au Gratin
- One package of smoked sausage
- 4 medium potatoes (I used yellow)
- 5 tbsp butter
- 2 tbsp flour
- 1 1/2 cups milk
- 1 tbsp dijon mustard
- 2 cups of cheese (I had a hodgepodge of leftover shredded cheese that I just mixed together. Use whatever you have on hand or really enjoy.)
- Salt & Pepper to taste
- Fry up some potatoes, sliced thin.
- Once those are booked, add in the smoked sausage and cook until done
- While that cooks, make the cheese sauce. (Picture below!)
- Melt butter in the bottom of a sauce pan
- Once melted, add flour and whisk thoroughly until smooth and thick
- Add milk slowly while whisking
- Once well blended and thickened, add cheese and mustard and stir until combined
- After everything is finished, pour the cheese sauce over the potato and sausage mixture and combine well.
I literally use this cheese sauce for everything from Macaroni and Cheese to a dip for soft pretzels. It is delicious, easy to customize, and can be used on anything.
